Simcoe Fresh Hop IPA

The allusion to pink elephants and the choice of names is not due to chance. With a particular character, the unique taste results from triple fermentation and the use of three different yeast strains. Sweet, biscuit malt backbone, supported by pleasant warmth and spice, finishes well rounded, floral, and dry.

Clean and crushable lager, brewed with puffed jasmine rice. Brewed with almost no hops, Chilean Ulmo honey provide delicate notes of jasmine, citrus, mint and floral aromatics.

Shifting with the seasonal hop harvest, this year’s beer features fresh Strata, Simcoe, Citra, and HBC 1019 hops, giving big aromas of berry with citrus and dank tropical notes to round it out.

FRESH HOP HAZY IPA Collaboration with RUSE BREWING

The seasons are changing, daylight hours dwindle as hop farms across the land cut down their bines. The dark, low skies of the North Coast are filled with the probability of precipitation. For a third year, we’ve teamed up with Ruse Brewing to brew Sediments of Memory (from memory, of course). We crafted this brew utilizing our finest, warmest summer memories as a binding agent.

Sediments of Memory is a fruity, full, barely bitter peach-colored Hazy IPA with a slightly sweet finish. Brewed at Fort George with over 600 pounds of fresh Citra Hops from Coleman and about 20 pounds of memories.

Heirloom dessert apple juice fermented on Pinot Noir skins from Kristof farms. Notes of dark, sweet cherries, clay, and pepper.

Saison brewed with 100% Oregon grown malted barley, hops, & yeast. Fermented with proprietary house saison strain, hopped with fresh Strata and Lorien hops and dry hopped with Audacia and Strata hops.

A few months ago we brewed a beer with Hop Butcher at their location in Chicago. We called it Bride of Pierogi, because pierogi is great (and so is the Chucky film franchise). There is no food more versatile or more satisfying than Pierogi. It’s stuff in dough. Pure magic. And so is Fresh Pierogi. Except we swapped the dough for pilsner malt and white wheat, and swapped the potato for Fresh Hops. We poured 600 pounds of Fresh Strata Hops into this Hazy Double IPA.

Pairs best with fresh pierogi, obviously.

Vanguard Gamma Green is a seasonal, S.M.A.S.H. (Single Malt And Single Hop) fresh hop IPA, released annually in September, that is a collaboration between Vanguard Brewing Company and McMenamins. This year’s version features fresh, organic WCHB-102 hops from Oregon Hop House and delivers dank, fruity characteristics with a 5.8% ABV.

Patagonia Provisions Organic Non-Alcoholic IPA is a Certified Organic premium non-alc brew with bold citrus notes and a refreshing hop-forward character, all at <0.5% ABV. It’s brewed with Certified Organic hops, malted barley, and Kernza®, a soil-saving, carbon-capturing perennial grain. The ingredients in our NA Organic IPA are grown in ways that improve soil health, minimize erosion, preserve biodiversity and protect waterways. In other words, this is 12 ounces of good news!

Has this ever happened to you? You’re grilling in the back yard with your buddies, enjoying a round of Palomas on a Saturday and suddenly someone yells from the kitchen that you’re out of tequila!
Don’t panic, we got you. Our Paloma Sour was brewed with real grapefruit & lime and fermented with a unique yeast strain called Lachancea, adding a tangy zip. All of this culminates into a tart, dry beer so close to the cocktail you’d swear there’s a shot of reposado in there. Salud!

Hop harvest in the Yakima Valley brings a fleeting moment of magic each September – and for the first time ever, we’re releasing Fresh Hop Topcutter IPA to capture that magic in every sip. Brewed minutes after the fresh Simcoe® hops were picked from our family’s farm, this special-edition of our flagship IPA bursts with the signature pine, citrus, and stone fruit character of Topcutter, but with an extra juicy vibrance and resinous depth that only fresh hops can deliver. We created this Belgian ale with our buds from Central Oregon’s own Monkless Belgian Ales. Our intention was to take a timeless classic and push the stone fruit notes to 11. We accomplished this with supreme balance by adding just the right amount of NW sources Italian plums. This beer boasts a beautiful bouquet of malt, spice and plum, yet leaves the palate with a refreshing dryness.

10 Years 10 Different Hops

This beer is brewed in collaboration with Cervecería Hércules for a new event called MXPDX. MXPDX is the latest international project from Beer Friends, a 501(c)(4) non-profit behind the immensely popular Fuji to Hood festivals. A biennial celebration linking Oregon and Japanese culture through beer, Fuji to Hood has rapidly grown from 450 attendees in 2018 to 2,500 festival goers in 2024, currently making it the largest beer festival in Portland. Fuji to Hood’s ability to bring together communities through its unique approach of blending Japanese-inspired drinks, food, music, and culture has led to its success in drawing visitors from Portland, Oregon, other states, and abroad. With MXPDX, Beer Friends will apply this same approach to creating bonds between Oregon and Mexico, a country bountiful in culture that has enjoyed a lasting and growing appreciation among Oregonians.

Run Wild is the ultimate sessionable IPA for craft beer lovers. Brewed with a blend of five Northwest hops, it has an approachable bitterness to balance the specialty malt body. Always refreshing and only 65 calories.

This Strawberry Lemonade is the perfect ode to summer. Bold and tart upfront, the taste profile then resolves into the sweet citrus and berry notes from the lemon, orange, and strawberry. The orange is not meant to be a primary flavor but to add extra sweetness to balance the lemon and enhance the strawberry. The final aspect (you may get this upfront, too, but for me, it comes at the end) is the floral aspect. There is the obvious lavender floral flavor that should be light on the palate and also come through on the exhale.

One important thing to note is that lavender should not be a heavy perfume-like scent but instead a nice, balanced, and beautiful floral accent. Lavender will add a hint of bitterness that helps with the overall mouthfeel and almost adds a bit of body, similar to the ginger in the Grapefruit Hibiscus.

Every September brings the Green Rush: the annual influx of brewers and beer lovers to the Yakima Valley to search out the best fresh hops. We’ve got a front row seat on our family hop farm, and this year, we’ve again partnered with the legendary Russian River Brewing Company to create a fresh hop IPA that tastes like striking gold – fresh hop gold, that is.

This fresh hop West Coast IPA features freshly picked homegrown Simcoe® hops for vibrant aromas of grapefruit, peach, mango, and resin.

Our unfiltered Bavarian-style Märzen Lager, brewed with specialty German malts and hops. Delicate hopping with noble varieties imparts subtle floral and spicy hop aromas, while Pilsner and honey malts contribute a blend of biscuity, toasty and nutty flavors. Extended lagering smoothes the brew, providing a round, thirst-quenching finish.

Ripe IPA is already dry hopped with Citra and Citra Lupomax hops, but Fresh Hop Ripe gets an added 400 pounds of sticky wet farm fresh Citra hops from Coleman Agriculture.

Teaming up with our funky friends from Sisters, OR, we’re bringing a hoppy crusher for the season! Backed by a thiol concoction of Southern Cross in the whirlpool, and layered with Nelson and Wai-iti hops to compliment; we wanted to showcase the experimental HBC 586 hop. This WCIPA is popping with mango, guava, and lychee. Slightly floral, and heaps of tropical goodness!

Fruited Sour

Best Day’s Electro-Lime Cerca de Cerveza is a refreshing Mexican-style lager crafted with fresh lime purée and sea salt which has naturally occurring key electrolytes including magnesium, potassium, calcium and sodium. The addition of Motueka hops, add a unique flavor and aroma of tropical limes.

Craftwell Cocktails’ non-alcoholic Pineapple Margarita is a tropical twist on the classic cocktail. It’s made with fresh Costa Rica Gold pineapple, key lime, and agave nectar.

The founders of both Double Mountain and Solera have deep roots in the Midwest heartland. But things once familiar change. Old dirt roads get paved, and houses get built in cornfields. Sometimes you eat the bar, other times the bar eats you. Citra and Mosaic hops join forces with Fresh Strata hops for a brawl of sticky citrus and resinous tropics, finishing aggressively balanced and dry.

Mischievous & spiced, Hollow Jack is far from empty. A brew of fresh-pressed apples, caramelized pumpkin and sweet potatoes is finished with a dash of honey and spices to carve out this special Fall cider.

A spontaneous wild ale aged for two years in oak barrels with 46-year old pu’er tea leaves.

Turbulent Consequence is brewed using classic lambic methods from the Senne River Valley in Belgium. A multi-step turbid mash of unmalted wheat and barley undergoes an extended boil, along with aged hops. After the boil, hot wort is pumped into our coolship and cooled overnight, where thriving resident flora from our wild cellar inoculates the wort. It is then filled into oak barrels for spontaneous fermentation and extended maturation. Select barrels from the Turbulent Consequence program are used in various blends throughout the year.

Van Henion Kölsch is a classic German-style ale brewed true to tradition with German.

Brewed with BRU-1 & Sabro hops grown in the Pacific Northwest. Hoppy and tropically refreshing with a familiar, full-bodied mouthfeel, we crafted this alternative Hazy IPA using only traditional methods for those moments when only a “craft brew” will do.

Milk sugar, cocoa nibs, and caramel malt build the rich, full body of this brew, with mild roasted notes coming from three varieties of chocolate malt. Have some dessert today – served in a glass!

This year we diverged from our 100% Alexeli estate fruit Rosé and created a blend with 45% arriving from Paradis Vineyard, a L.I.V.E. and Salmon Safe Certified vineyard near McMinnville for a bit of extra depth. Similar growing styles paired with variations in micro-climate made for a fun blending session with our wine team. LIVE and Salmon Safe Certified, Dry Farmed, Vegan.

Müller-Thurgau, Riesling and Gewurztraminer come together to teach us just how lovely an aromatic white wine can be.

A blend of Syrah, Merlot, Cabernet Sauvignon and Pinot Noir from several AVAs that has come together in a simple, tasty little wine. Great with a burger. Great with great company.
