From our hidden archives, [CLASSIFIED] boasts two mystery agents. Your mission: Identify the secret hops. Look out for anyone with pineapple candy or resinous qualities—a hint: both hail from Down Under.

La Baie Sauvage, or “the wild berry,” is a Lambic aged on huckleberries. This untamed fruit is similar to blueberries and has yet to be successfully cultivated anywhere in the world! Consequently, the particular huckleberries the world-class crew at pFriem used in the brew had to literally be foraged in Gifford Pinchot National Forest in southern Washington! But first, the brewers started with a Lambic aged in oak for two years. Then they added the elusive berries, allowing them to ferment for six months. Finally, they bottle conditioned La Baie Sauvage with champagne yeast for a scintillatingly effervescent sip.

Notes of bright, luscious jam and piney juniper intertwine with tart, tangy nuances of lemon zest and pineapple. Whispers of oak carry underneath until a refreshingly crisp finish.

Orange Peel, Toasted Bread, Rye Spice

This Hazy IPA pours hazy golden yellow with a meringue-like foam. The aroma showcases passionfruit, but is supported by notes of lychee, mango, and gummy candy. Creamy flavors like pina colada and passion fruit sorbet play off flavors of berry jam. The finish is silky smooth with just the right amount of bitterness.

pFriem Stone Fruit Cuvée delivers an elegant drinking experience, carefully blending ripe apricots, peaches, and nectarines harvested at peak ripeness. Aged in French oak barrels, this Saison matures with Brettanomyces, adding a touch of complexity. Its golden body is crowned with wisps of white foam, while soft notes of apricot flesh, peach candies, and nectarine juice swirl on the palate. The finish is gentle and fragrant, leaving a lasting impression of juicy stone fruit and delicate funk.

pFriem Maple Barrel Aged Smoked Porter is a rich delight for the senses. Enjoy opulent aromas of vanilla, candied walnuts, and bourbon-spiked coffee. Cozy notes of pecan pie baking in a wood-fired oven, rich toffee, and dark chocolate delight the palate before giving way to a decadent finish. Go ahead, treat yourself.

Cognac Barrel Aged Double Mash Imperial Stout pours deep, dark, and obscure. A formidable black void that no light can escape, nestled beneath a swirling milky way of foam. Gently adrift in aromas of chocolate ganache, fresh-brewed espresso, and warming brandy. A nebulous veil of malted milk, and unfathomably dark cacao coalescing in a deep gravity well of vanilla liqueur and wood spice.

Every Wednesday after Labor Day, we gather in the courtyard of our Pub in Astoria to pick hops off the bine for our favorite and longest running seasonal beer: CoHoperative Ale. Every year, friends and family from all over Oregon and Washington drop off between 80 and 120 pounds of backyard hop harvests to be processed and dumped directly into the hop back. We’ve been brewing CoHop for nearly two decades and we have friends and neighbors who’ve been contributing their hyper-local hops since the beginning.

Classic malts and hops are the buttons that hold this red ale together. A balance between the smooth malt and subtle hop profile finishes out this amber hued brew.

The pFriem + Loyal Legion Vietnamese Lager captures Saigon’s vibrant essence—bringing together friends, foods, and an easygoing spirit. Brewed with toasted rice for a slight sweetness and a tropical touch from Nelson hops, this lager is crisp and quenching with a harmonious bitterness. Designed to pair seamlessly with classic Vietnamese street foods, it invites drinkers to savor moments with friends, just like a bustling Saigon night.

Pours a light and vibrant shade of cherry blossom pink, under a bright white cap of foam, with champagne like effervescence. Opens with vibrant aromas of fresh wild strawberries, grapefruit, watermelon, and a hint of peach. These ripe aromas carry over to the palate and are accented by notes of fresh florals, mint, and minerality. Finishes soft and dry with tart cherry on the tongue.

We use 2.7 pounds of fresh apricots per gallon of our Lambic-inspired Ale, to make pFriem Abrikoos. That may sound like a lot, but once you taste the pungent aromas of sweet dried apricots, grape, and cantaloupe and tart and tangy notes of baked lemons, pineapple nectar and canned peaches, we think you’ll agree, it’s just right.

Brewed just like in Cologne with all-German ingredients, then fermented slow and cool with an authentic Kölsch yeast strain brought back from brewer/owner Alan Taylor’s studies in Germany. Crisp and lightly fruity- a year-round sessionable German-style ale. 4.9% ABV / 20 IBU

Fresh Hop Zoigl-Kölsch is the standard base beer but with 75 lbs of fresh, local Tettnanger hops added in the whirlpool. Only 50 cases canned! 16oz cans, 4-packs and draft available only at the brewery!

Best Day’s Electro-Lime Cerca de Cerveza is a refreshing Mexican-style lager crafted with fresh lime purée and sea salt which has naturally occurring key electrolytes including magnesium, potassium, calcium and sodium. The addition of Motueka hops, add a unique flavor and aroma of tropical limes.

Craftwell Cocktails’ non-alcoholic Pineapple Margarita is a tropical twist on the classic cocktail. It’s made with fresh Costa Rica Gold pineapple, key lime, and agave nectar.

Druif Rouge is our latest foray into the world of wine grapes. We paired our Lambic-inspired ale, aged in French Oak barrels, with Pinot Noir grapes from our friends at Trisaetum Winery. The happy result is Druif Rouge, featuring aromas of watermelon and dark berries, and notes of juniper, plum, and kiwi. Enjoy the union of grape and grain!

Riesling grapes from Brooks Estate Vineyard mixed with our Lambic-inspired base imbue pFriem’s Druif Blanc with inviting aromas of fresh bread and berries. Its notes of delicate rose petals, pear and green apple, and its dry, sparkly finish may think its fine wine, but it’s beer— we promise.

Just to be safe, we suggest foregoing cookies and leaving Santa a pFriem Belgian Christmas Ale. Brewed with coriander in a rich, Dubbel base, its toffee aromas and hints of fresh, ripe orange will leave a milk-chocolaty velvet coat on Santa’s tongue and guarantee that you won’t be getting sticks this year.

Each batch of pFriem Pumpkin Bier is made with fresh pumpkin and real spices in addition to the standard malt and hops. That’s why every pint is overflowing with aromas of vanilla, notes of cinnamon and touch of caramel. Czech-Style Dark Lager is wonderfully complex, delivering notes of toffee and dates, with a kiss of roasted malts and milk chocolate. It’s brewed in the spirit of Prague’s 500-year lager tradition, inviting us all to party like it’s 1499. Pairs smartly with roasted meats, rustic veggie dishes and a bit of Euro cool.

This year we diverged from our 100% Alexeli estate fruit Rosé and created a blend with 45% arriving from Paradis Vineyard, a L.I.V.E. and Salmon Safe Certified vineyard near McMinnville for a bit of extra depth. Similar growing styles paired with variations in micro-climate made for a fun blending session with our wine team. LIVE and Salmon Safe Certified, Dry Farmed, Vegan.

Müller-Thurgau, Riesling and Gewurztraminer come together to teach us just how lovely an aromatic white wine can be.

A blend of Syrah, Merlot, Cabernet Sauvignon and Pinot Noir from several AVAs that has come together in a simple, tasty little wine. Great with a burger. Great with great company.

Some say the origin of this ale is shrouded in a dark mystery. Others say its origin can be traced back to the Cascadia region, where it was named. We say stop reading already and enjoy this hoppy brew with its tanned marshmallow-like foam top, while the aroma of fresh-cut Douglas fir and delicate scent of toffee dance below the surface. After all, some mysteries are best left unknown, while others are left to be drunk.
