We stepped off the ferry in Styrsö, walking right across the lowered bow onto the dock. To our right sat a sweet cafe, it looked simple, and inviting, with seating outside. The day was cold, but the sun was shining in that perfect combination when we needed mittens on our hands and a swipe of sunscreen on our cheeks.
I let us into the cafe’s patio garden through a short gate. A couple wrapped in scarves and wearing dark sunglasses was having a glass of white wine. Though it still felt early to me, it was at least noon. The trek across the city and the water had placed us well into the day.
We stepped into the rustic cafe, and I immediately knew we’d stay here for a while. I ordered a cup of tea for which I was given a mug steaming water and a loose tea strainer. He gestured to the counter behind me which, aside from a little vase filled with teeny, hot pink roses, and an antique lantern, was a tray of glass jars holding shaggy loose leaf teas

Our Saison Betta is throwing it back to a true pioneer, Seizoen Bretta, from Logsdon Farmhouse Ales. One of the original American Brett beers, this beauty took home the first-ever Gold in its category at the 2012 GABF.

This time, we’re using the same two Brett strains and hop combo: Fuggle, Golding, and Rakau. Layered on a crisp base of pilsner malt, wheat, and oats. It starts clean and biscuity, but after six months in our house, Brett, it turns into a full-on fruit bomb. Think stonefruit, mango, and a hint of tart cherry.

Originally made in 2023 with Ex Novo Brewing Co. this inventive Soft IPA is inspired by the tea latter, London Fog: an intoxicating combination of Earl Grey Tea, vanilla, and steamed milk. We hope you enjoy this updated version.
*We’re pretty sure Ted would love this beer.

Every year, right around the beginning of May, Fort George goes out to the forest to pick spruce.

People have been making stuff out of spruce tips on this continent for hundreds of years. In the 16th Century, First Nations people taught sailors from Europe how to brew a tea from cedar that contained enough Vitamin C to prevent them from dying of scurvy. Easy to make, likely to keep sailors alive and also alcohol. Win, win, win.

We don’t make Spruce Budd every year because we’re otherwise in danger of dying of scurvy. We just make it because it’s tasty.

Spruce Budd is comprised of pilsner malt, water and hundred of pounds of hand-harvested spruce tips.
