A special collaboration with Upright Brewing. Built around the traditional deep red hue and the iconic C-hop trio of Chinook, Cascade, and Centennial, our version keeps things true while bringing in a few modern twists. We used Gambrinus Mars Malt to hold the classic color but finish dry, then loaded the kettle and fermenter with Crosby Hops’ Deep Cut Cascade CGX NUVO—cryo-frozen fresh hop powder that delivers a concentrated burst of citrus and pine. Michigan-grown Mackinac, a Chinook offspring, adds a bright tropical layer on top of the bold bitterness.

This hopped up NW IPA has a percussion of citrus, stone fruit and pine characters. The strong aroma carries well into the beer, delivering a tsunami of flavors to the senses.

Four is a wheat based table saison embodying the spirit of country style French ales with light floral tones and a dry, tart finish.

This past spring, we went to a small Bavarian town, Ettal, to brew a collaboration bier with our dear friends @benediktiner_weissbraeu

Old world farmhouse ale meets modern farm fresh hops in this tribute to PNW harvest season. Green, un-dried Citra hops are rushed from farm to brewery and added to a barrel aged wheat saison, resulting in notes of grapefruit, lychee and white tea.

Styled after the many great Doppelbocks of Germany, this dark, malty lager is fermented with a traditional bock yeast and imported MFB and Gambrinus malts to aid in obtaining some of that local authenticity.

A historic saison style beer made with calendula and homegrown yarrow flowers yielding a hugely aromatic brew that’s dry and bitter. It’s an excellent aperitif and always ready about a month and a half after the first spring yarrow flowers.

Pours a light and vibrant shade of cherry blossom pink, under a bright white cap of foam, with champagne like effervescence. Opens with vibrant aromas of fresh wild strawberries, grapefruit, watermelon, and a hint of peach. These ripe aromas carry over to the palate and are accented by notes of fresh florals, mint, and minerality. Finishes soft and dry with tart cherry on the tongue.

A Munich Helles Lager is the epitome of balance and nuance. Noticeable malt character, but not too malty. Noticeable hop character, but not too hoppy. The key is using quality ingredients and a meticulous process. Fort George brewed with German malts to get the proper regional flavor profile and Hallertauer Mittlefruh hops for a delicate balance of floral and fruity. Fermentation was extra low and slow, creating a clean and crisp ester profile. And traditional spunding, where the tank is kept under pressure during fermentation, produced natural carbonation. The result is a sessionable, flavorful, crisp beer for your favorite outings.

A golden wild ale aged in Cognac barrels. After extended aging, this was transfered into oak tank and refermented with Oregon Peaches.

Warm, smooth, sweet dried fruit and vanilla complement a commanding Brandy character. This remarkably limited version was 100% barrel-aged for 12 months in Brandy casks.

Druif Rouge pours a strikingly luminous, ruby-strawberry with a lively white crown. Sophisticated aromas of watermelon, dark berries, lemon and soil precede vinous notes of juniper, plum, kiwi and warming spices. A balanced finish of juicy fruit and dry tannin invite further inquiry.

This red ale is the perfect balance of NW Pale and Crystal malts with subtle fruity and citrusy hops.

A juicy fruit forward profile is balanced by mid-palate tannin and nuanced acidity. This blend of two separate Willamette Valley vineyards brings together the warmer microclimate of the Eola-Amity Hills with the cooler areas of the Cascade Foothills; adding both bright acidity and ripe aromatics. Excellent wine for casual evenings and weekday nights.

Age is nothing but a number, except when it comes to our Saison beer, where age means more developed flavors. It’s a nod to a traditional Saison beer that would have been aged longer during the winter months. Fragrant, with tropical aromas of guava, it brings a taste of resin and kumquats.
