An IPA with every different type of Simcoe we could get our hands on. Mat and Conrad make beer at Living Häus in Portland, Oregon. This spring they came out to brew a beer with us in Astoria. And we named the beer Dominik, after Michal’s dad who owned a flower shop called Krokus in Chicago. Dominik IPA was named for Dominik, brewed by Michal, dry-hopped by Jen or Ashley. It will be packaged by Shane in cans designed by Will and ordered by Colin. It will be picked by Domingo, loaded by Mike, and delivered by Benji or Sofi. Finally, it will be stocked by Lou, poured by Carrie or Jeffrey, and enjoyed by you.

“When I was six, Mom was out of the house for the day and
Dad made us one of the best afternoon snacks I’ve ever had.
He made us the Dirt Sandwich. I remember being in the
kitchen while Dad put the ingredients together, telling us
what kind of earth each ingredient represented. Two
*toasted* pieces of bread (preferably cinnamon raisin) as
the solid foundation of tectonic plates. Next the *crunchy*
peanut butter representing clay with rocks in it. Above the
peanut butter comes a THICK layer of brown sugar – sand
obviously. Finally, a thin dusting of cinnamon to round
things out. The sandwich is complete from here but may
have additional ingredients. Personalize with other forms of
dirt represented by whatever you have on hand: M&Ms,
walnuts, pecans. Mom still remembers the sandwich with a
laugh; Dad and I remember it as the best sandwich on earth.
I still make one from time to time. Something about
straight sugar on a sandwich is just a miracle.

This hazy IPA was brewed utilizing two of our favorite hops; Citra and Mosaic! The result is a tropical fruit medley with a balanced overripe dankness. Notes of pineapple, guava, lychee and citrus are the real show here, while the malt bill helps accentuate the fluffy mouthfeel known and loved in this style. This special IPA still finishes relatively dry to ensure maximum crushability.
Malt: 2-Row Pale, White Wheat, Rolled Oats
Hops: Citra, Mosaic
Yeast: London Ale
