At Fort George, we’ve been making wood fired pizza for over a decade. In San Francisco (the home of our friends at Cellarmaker brewing Company), you can get the best of almost anything. That’s what you get when you cram nearly one million people into a city that measures less than 50 square miles. You’ll find great pizza and excellent IPAs all over the Bay Area and Cellarmaker knows a lot about both.

Pizza Pals is the perfect beer for pizza: A super opaque, pale yellow hazy IPA. Dense guava and overripe fruit aroma, flavors of candy melon and orange zest with a smooth, soft bitterness and mild, comforting sweetness.

Hops: Simcoe, NZ Cascade, FS Nelson, Hollingberry Galaxy

T’is the season for a big, malty hop bomb…We’ve loaded our inaugural holiday brew up with enough Centennials to fill Santa’s toy bag. Cheers to hoppy beers! Brewed with Gambrinus Organic Pilsner and Munich malt, imported crystal malts and Centennial hops.

As winter makes its arrival, so does the tradition of “winter warmers”. Snow Cave is our take on a warming, winter ale to usher in the season.

A hearty malt backbone gives notes of toffee, fir and toasted bread crumbs for a malty and slightly sweet base. Fruity notes from Crystal, Galaxy and Cascade hops balance the maltiness for the perfect first winter beer of the season to be enjoyed by a cozy fire – whether that’s out in a snow cave or your own fireplace.

As black as the uncaring hearts of the czars of Russia, as rich as their estates, as decadent as their palaces, and big enough for their empire, this imperial stout is nothing if not premium.

Brewers in the midlands of England would boil their barleywine ales for longer times to intensify their flavors. In making MASSIVE! we used only British Marris Otter pale malt and boiled for eight hours, giving the beer a deep ruby color and rich malt flavor. Heavily hopped, MASSIVE! is a beer that can be enjoyed now for its intensity, or after years and years and years of aging. 12% ABV Beer #40

WEST COAST IPA

Though pterodactylus antiquus was the first pterosaur fossil to be discovered and classified (in 1812), we still don’t know exactly what it looked like. There are some guesses but let’s be real. Just imagine if you had to guess what a hippo looked like based on a 160 million year-old fossil of its skeleton. All we know is that there’s a pretty fair chance it was covered in feathers, it had some weird hand bones, and there’s a very good chance that it was terrifying.

Fortunately, we know exactly what PteroBRACTyl (the IPA) looks like and it’s not at all terrifying. We just brewed it, with hops that were just invented. And we also know what it tastes like. It’s a super citrusy, perfectly tropical West Coast IPA made with New Zealand Bract 109 hops and Citra Cryo.

Cetus is the name of the Sea Monster constellation visible in the Autumn and Winter sky.

Cetus has a solid pilsner malt base that is then accentuated by some great hops. Cryo 586-Krush. Idaho Gem and Cryo Columbus Hops bring a crisp West Coast bitterness and loads of hop flavor. The dry hop brings tasty flavors of citrus, stone fruit, and a solid light tropical flavor. Finishing crisp and drinkable.

This Belgian-inspired blonde ale is deliciously complex and deceptively strong, with nuances of lemon meringue, tangerine and clove. It’s a fruit forward ale with a dry finish and a most refreshing, citrus kiss. Great with rich pastas, shellfish, hearty greens and robust dialogue.

Belgians say, “Op uw gezondheid’” when toasting, but you don’t have to speak Flemish to appreciate the bold, complex flavors of fig dipped in dark chocolate, ripe fruit and toffee in this immense Ale. Op uw gezondheid!

Collab with Loyal Legion

Blend of wine barrel-aged tart farmhouse ale, matured on Oregon grown marionberries, blackberries, red raspberries and blackcap raspberries.

We use 2.7 pounds of fresh apricots per gallon of our Lambic-inspired Ale, to make pFriem Abrikoos. That may sound like a lot, but once you taste the pungent aromas of sweet dried apricots, grape, and cantaloupe and tart and tangy notes of baked lemons, pineapple nectar and canned peaches, we think you’ll agree, it’s just right.

Pours a light and vibrant shade of cherry blossom pink, under a bright white cap of foam, with champagne like effervescence. Opens with vibrant aromas of fresh wild strawberries, grapefruit, watermelon, and a hint of peach. These ripe aromas carry over to the palate and are accented by notes of fresh florals, mint, and minerality. Finishes soft and dry with tart cherry on the tongue.

Bourbon Barleywine is spicy and a bit surly, a beautifully big sipper with soft hits of caramel, baking spice and oak. Spicy and impetuous now, with years of aging, this big brew will mellow with transcendent complexity and luscious mouthfeel. It’s a sturdy nightcap to slip on, during and after a rich, saucy meal.

Flemish Etiquette implores you to wait and see if your host offers a toast before sipping your drink. Where his Belgian Strong Blonde is concerned Pfriem sees things differently. Waiting to taste a perfect harmony of strength and elegance, while sniffing its pear and clove bouquet is like torture. Clean maltiness, invigorating effervescence and just enough bitterness wait for no one.

pFriem’s Prium is a fruit-forward Lambic-inspired ale with a modern plummy twist. You’ll think it’s grapefruit but really, you’re cascading through juicy, sweet Brooks and Italian plums from our friends at Sherwood Orchards. Rounded out by rosy hits of lavender and white spring flowers, its unique berry-like tartness is the perfect plum pairing for a night of doing anything. Or nothing. You choose.

Our nod to this Belgian classic is a study in balance – sweet and tart, bold and light on the tongue. OBK is barrel-aged for three years, with rich notes of raspberry, fig and leather, which linger long enough to contemplate popping another.

Each batch of pFriem Pumpkin Bier is made with fresh pumpkin and real spices in addition to the standard malt and hops. That’s why every pint is overflowing with aromas of vanilla, notes of cinnamon and touch of caramel. We think you’ll agree that it’s just as flavorful as mom’s pumpkin pie and there’s no baking required.

Symposium Cold Brew Coffee infused into our English Brown that was modified specifically to handle tea and coffee infusions.

Our year-round coffee porter aged in rum barrels then dosed with cold pressed coffee. It has notes of rum, caramel, toffee, chocolate and (of course) coffee. It’s the beer that says “good morning” to you!

Our friends at Big Nose Kate inspired us to brew a beer that pairs perfectly with their whiskey; featuring some of the same grains they use. With that in mind we made a light Vienna-style lager with Pilsner, Vienna and Rye malts paired with Spalter Select & Czech Saaz hops. Look for notes of fresh baked bread, subtle rye spice and a mildly citrusy hop finish. Swing those saloon doors open, cue the piano music and grab a pint & a shot!

As the night wraps the world in its shadow, Alpine Terror comes to life. Our Black Lager boasts an aroma of specialty roast and warm brown sugar. Each sip unveils a delicious abyss, where roasted malt meets the comforting sweetness of caramel, complemented by a depth of cocoa and the inviting taste of dates.

Kriek with Brooks cherries Barrel Aged in wine barrels

Styled after the many great Doppelbocks of Germany, this dark, malty lager is fermented with a traditional bock yeast and imported MFB and Gambrinus malts to aid in obtaining some of that local authenticity.

Our traditional German-style lager made with 100% German malt and hops. Deep reddish-brown color from Munich malt and the double decoction mash process. Aroma is all malt with notes of toasted malt, plum and raisin. Rich malt flavor with more of the same. A festive beer for the cold months whilst ruminating on world events.

Hard Seltzer with Sea Salt and Lime

Crisp & Dry Hoppy Italian Pilsner

This contemporary IPA blends high doses of Centennial, and Citra with a dash of Mosaic and Simcoe for something intrinsically refreshing. Close your eyes and think of a time when old school and new school combined.

Juicy red cranberries from the Everest family farm in Sixes, Oregon, fermented together with apples from our farm. The tart berries balance the sweetness of the apples, with a splash of fresh apple juice added just at the end. It is sure to brighten your holiday table.

Substantial malt backbone with notes of toffee and toasted raisin wheat bread.

Traditional German-style lager with clean bitterness. very light, crisp and refreshing.

Honeycrisp Apple Cider

A golden wild ale aged in Cognac barrels. After extended aging, this was transfered into oak tank and refermented with Oregon Peaches.

Warm, smooth, sweet dried fruit and vanilla complement a commanding Brandy character. This remarkably limited version was 100% barrel-aged for 12 months in Brandy casks.

An imperial stout brewed with black strap molasses, licorice, and cherry bark, with vanilla added. Aged for 12 months in cognac barrels.

Tropical juicy fruit layered on a subtle malt backbone

Van Henion Kölsch is a classic German-style ale brewed true to tradition with German Pilsner malt and Hallertau Mittelfruh hops. This beer pours light blonde in color and has a crisp, refreshing finish. When the dog days hit, make sure a few cans of Van Henion Kölsch are at the top of your secret stash.

Our Flagship West Coast IPA, Pale in color with layered flavors of Berry, Pine, and an explosion of tropical citrus fruits.

A juicy fruit forward profile is balanced by mid-palate tannin and nuanced acidity. This blend of two separate Willamette Valley vineyards brings together the warmer microclimate of the Eola-Amity Hills with the cooler areas of the Cascade Foothills; adding both bright acidity and ripe aromatics. Excellent wine for casual evenings and weekday nights.

This mythological beer emerges from the depths of our brewery every winter. Made with organic Northwest hops and organic malt, Abominable has a complex floral, spicy, and citrus hoppiness backed up by just the right amount of malt sweetness. Don’t turn your back on the beast!

Müller-Thurgau, Riesling and Gewurztraminer come together to teach us just how lovely an aromatic white wine can be.

A blend of Syrah, Merlot, Cabernet Sauvignon and Pinot Noir from several AVAs that has come together in a simple, tasty little wine. Great with a burger. Great with great company.

Our hefeweizen is of the classic Bavarian variety. Made with 70% wheat, lightly hopped with German Hallertauer, it’s refreshing and slightly dry with the beguiling banana and clove notes that give away the provenance of the true weizen yeast we use. This is a German-style wheat beer the way it should be–no lemon needed to make up for inadequacy.
