“Culture Shock” is a Dark Sour Lager w/ Herbs and Spice. Sisters Kaori & Mayuko from Minoh Brewery in Osaka brought fresh Sansho peppercorns native to the Osaka prefecture and Tomoko, from Harvest Moon Brewery, brought Shiso Furikake, a blend of red shiso leaves, plum vinegar, and salt.
A base lager beer – with chocolate wheat and Carafa malt for a soft dark malt character and fermented cold and clean, allowing those Japanese ingredients to shine. Once this beer reached peak fermentation, we blended it with our house Lacto wort, then finished fermentation with the Shiso and Sansho. The result turned out to be a one-of-a-kind beer – both complex and highly drinkable! With hints of cherry and herb, it has a slight salinity, and a mouth-watering sourness.
